This is a recipe from a local chef who wrote a cookbook featuring all of the dishes he serves at his restaurant. This was the first recipe I tried since it seemed so easy. It is considred an appetizer. My husband and I both really enjoyed it even though we were hesitant about the mint and lima beans. We both love hummus and this was a surprisingly good alternative! I think this would be really good in the summertime.
Ingredients:
2 cups fresh or thawed frozen lima beans
4 cloves garlic
6 mint leaves
1 1/2 Tbsp. fresh lemon juice
2 Tbsp. olive oil
2 Tbsp. vegetable oil
1 tsp. white vinegar
1 tsp. salt
1 tsp. sugar
Directions: Place in a food processor and blend until smooth. Serve on top of toasted bread, with crackers, or with sliced vegetables. Refrigerate any extra.
Makes 2 cups
