Chicken Tacos - 100th Post!

I can't believe today is my 100th post!  I think it's kind of funny that it's about something as silly as chicken tacos.  I started this blog to document our personal experiences with having a baby.  Even though that's what it has mostly been about, it has turned into more.  It's fun to post about recipes I've tried and if they went over well or what I would do differently next time. 

My husband loves chicken tacos and will get them almost every time we go to a mexican restaurant. Since I've been on bed rest for the past 11 days, we haven't gone out to eat.  I also keep thinking about how once Ava is here we won't be able to go out to eat for a while.  This will probably be better for us in the long run because it will help us save money and be more healthy.  So, I've been looking for fast, easy recipes that we can rely on once the baby is here. 

I found the perfect recipe yesterday for chicken tacos....


Ingredients:
4-5 frozen chicken strips (you can do this with frozen chicken breasts, too - just use less)
2 cups salsa (I used a full jar of the medium Pace salsa)

Directions:
Put frozen chicken in a crockpot.  Pour salsa over chicken.  Cook on low for 4 hours.  Shred chicken.  Serve with favorite taco toppings.  We used soft tortillas, lettuce, shredded cheddar cheese and sour cream.  I thought we would want more salsa to put on top, but we didn't need any because there was pleny from when it was cooked with the chicken.

Serves 2 (with a little left over for lunch the next day)

This recipe was soooo easy and both my husband and I loved it.  I served it with Zatarain's boxed Spanish rice (which is also very easy to make).  I know this meal will become a staple in our household.
