Skinny Poolside Dip


I got this recipe from a co-worker and tried it tonight.  It was really good, very easy to put together, and husband-approved.  The original recipe called for 2 jalepenos but that made it very spicy so I cut it down to 1.

Ingredients:

1 red bell pepper (diced)
1 jalepeno (diced and seeded)
1 cup yellow canned corn
1/2 can (4 oz.) diced olives
8 oz. 1/3 less fat cream cheese (softened)
1 cup fat-free plain Greek yogurt
1 packet Hidden Valley ranch dip seasoning mix

Mix ingredients together.  Serve with crackers or raw veggies.
